PRIMARY FUNCTION:
Cafe

INSPIRATION:
Uniqueness is one of the essential elements for franchise operation of Cafe. One other point to be mentioned about the customer seating is that we have designed this store with an eye toward a couple of years after the store opening. Because, keeping the franchise operation in mind, there might arise some alterations in the seating variations and other irregulars in the future.

UNIQUE PROPERTIES / PROJECT DESCRIPTION:
We highlighted the strength that our client could provide and we reflected them into the designs. Taking advantage of our client’s strength, one of the first characteristic points of this cafe is the relation between the purchase counter and the kitchen. This client is headquartered in Japan with 1,300-doughnut shop brand stores, "& Dough" is a donut cafe brand to be newly developed and is the first store to make a grand opening.

PROJECT DURATION AND LOCATION:
The project started in March 2015 in Japan and finished and opened in October 2015 in Tokyo.

PRODUCTION / REALIZATION TECHNOLOGY:
By setting up a wall and balanced-sash-window, it enables to control the distance of customers and staff members according to cooking contents and the time of day. This counter style will make the customers flow even smoother. They can use the tray, take the products, go to the cash register, pick up the condiments, and go to their seats. Besides, we devised three kinds of combination for the shelves. That are shelves to stock things, shelves with blinds, shelves with graphic sheets attached to the transparent glass.

Chair of ground floor/ W435mm x D510mm x H800mm, Sofa of ground floor/ W530mm x D600mm x H620mm, Original tile/ W150mm x D150mm x H8mm, Stool of second floor/ W375mm x D375mm x H670mm, Chair of second floor/ W420mm x D495mm x H735mm. That all custom made.

RESEARCH ABSTRACT:
Cafe category is a highly competing business, thus uniqueness is one of the essential elements for franchise operation. So we carried out our original questionnaire survey to the customers, which was, how the customers would select their cafe stores.

CHALLENGE:
By using the client’s know-how and skills for donuts based on their criteria, we sorted out the data into what the competing stores could do versus what we could differentiate from the competitors. We highlighted the strength that our client could provide and we reflected them into the designs.

Doyle Collection co. ltd. was established in 2011.(Head office Tokyo, Japan) Aiji Inoue is CEO of Doyle Collection. Engaged as Interior Architect for 11years at a Japanese famous design studio. Created many projects and received high evaluation in every project. Most significant features of his works are not just creating one scene but sequence. Just now Doyle Collection has been expanding the market from Japan to Asia, UK and USA.
